Have you tried our delicious bacon? We have it all... short cut, thick cut, rindless, rind-on and the best of all... our traditionally wood smoked bacon. Bacon is such a versatile ingredient and while we usually think bacon and eggs for breakfast, it can be used so many different ways for lunch and dinner as well. So go on & get your bacon fix.... Here's a couple of ideas which are not only quick & easy, but tasty as well....
Bacon Wrapped Smoked Gouda Stuffed Chicken Breasts
4 boneless chicken breasts
4 slices bacon
Smoked gounda cheese (or any cheese of your choice)
1/4 teaspoon cayenne
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon pepper
Combine spices & pepper. Flatten chicken breasts to approx. 1/4" thickness. Season both sides of chicken with the spice mixture. Place piece of cheese on chicken & roll up, pressing firmly. Wrap each breast in a bacon slice & then bake in the oven for around 20-30 mins or until cooked. This is delicious with spinach or asparagus added to the cheese also!
Bacon, Tomato & Spinach Pizza
Store bought pizza base (or make your own dough)
1 cup alfredo sauce
1 cup shredded mozzarella cheese
1 package frozen chopped spinach, thawed & squeezed dry
2 plum tomatoes, thinly sliced
4 slices cooked bacon cut into 1 inch pieces
Spread alfredo sauce over pizza base. Sprinkle with 1/2 cup cheese. Top with spinach, tomatoes & bacon then sprinkle with remaining 1/2 cup cheese. Bake until heated through & cheese is melted & lightly browned.
500g packet penne (or any other pasta you have to hand)
12-15 slices bacon
1/2 cup sliced fresh mushrooms
2 garlic cloves, minced
1 cup grated parmasen cheese
2 cups thickened cream
1/2 teaspoon pepper
1/2 cup sliced green onion
Cook pasta & set aside. Cook bacon in a frypan until crisp then put aside to cool slightly. In the same frypan, lightly fry the mushrooms & garlic in the remaining bacon drippings until tender. Stir in pasta, parmasen cheese, cream & pepper & simmer over a medium-low heat until sauce is thickened, stirring often. Crumble the bacon into the mixture, stir the green onions in also then serve immediately.
